I have just created a YouTube channel so I can share the sourdough bread making videos as well as other supporting videos for the cookbook. The full list of ingredients for the recipe is below; and you can click on the video below for more info about ingredients and the equipment you'll need. This video also contains the very first step of the process: soaking the grains for the starter.
Once you have the ingredients, the very first step will be to soak the initial ½ cup each of buckwheat and millet for the starter in 1 ½-2 cups filtered water and leave it on the counter overnight...my next video will be Blending Sourdough Starter...
½ cup RAW buckwheat groats
½ cup hulled millet
filtered water for soaking
½+ cup spring water for blending
2 cups RAW buckwheat groats
2 cups hulled millet

½ cup ground flax seed
¼ cup chia seeds

1 ½ teaspoons salt
1 tablespoon sweetener, optional
2 teaspoons double acting baking powderÂ
1 ½ teaspoons apple cider vinegar
Episode 1 - introduction of ingredients and equipment + soaking grains for the starter
Episode 2 - blending the starter
Episode 3 - starter fermentation and soaking bread grains
Episode 4 - blending sourdough bread batter
Episode 5 - baking the bread!
If you have enough, this recipe works great with only buckwheat. To replace the millet, I would suggest using another whole grain rather than rolled oats if you have another option. Buckwheat ferments really well, so if you decide to try rolled it’s, maybe start with only buckwheat for the starter and use a larger proportion of buckwheat to rolled oats in the bread batter. You can also certainly halve the recipe.
Hello. Can you substitute any other grain, such as oats for the first step. I have buckwheat and oats, but no millet. Thanks!
